The story of Trecolori starts with Jack or Joaquín L. González, as he was known formally. But to everyone who met him, he was just Jack, a man who believed in big flavors, big dreams, and the beauty of bringing people together around food.

He opened his first Italian restaurant on East 53rd Street with a simple mission: serve honest, delicious Italian food, and treat every guest like family. No shortcuts. No gimmicks. Just good food made with love.

As word spread, Jack moved his restaurant to the heart of the Theatre District and renamed it Trattoria Trecolori, a nod to the Italian flag and a reflection of everything he wanted the space to be warm, vibrant, and full of heart.

When Jack passed away in 2001, his sons Marco, Victor, and Phil didn’t just take over the business, they carried his legacy forward. Today, every plate that leaves the kitchen still honors Jack’s vision: food that’s rooted in tradition, served in a space that feels like home.
